The story starts in the moss-shouldered hills of Western Oregon where a young Joe followed his love of music and food through the halls of the Portland Opera before being dropped into the vibrant communities of Manhattan. It was his great honor to open foodie bastions such as Blue Hill, Ureña, and Aix, experiencing the tutelage of Chefs Dan Barber, Alex Ureña, and Didier Virot. Their flair for invention was always balanced by a similar drive – is it pleasing to the guest?
